We have a Digi Connect IT Mini. With the SIM we currently have, the device will connect via CAT-M. If we want to connect to NB-IOT (we do have both locally) is a new/different SIM required or are there setting in the device?

I don’t know much about the Connect IT Mini, but I would suggest looking at Digi Connect IT® Mini User Guide
In most cases, the SIM should already be set up for both CAT M and NBiOT services. But it would be a good idea to double check with the Carrier.
If properly configured above, and if there are NBiOT services in the area that are allowing new connections, then it may connect to a tower that is offering NBiOT.
