I’ve looked through Digi’s documentation and can’t find any instructions on how to configure console redirection. I’ve also googled how this might be done but cannot find anything. Is there some documentation that I’m missing?

Can you please specify what you are trying to accomplish? Are you trying to forward serial data over the network? Any details you can provide would be helpful.
