I’m trying to connect a group of Xbee attached to some arduino boards that gather sensor data and I want to send the data to a central Xbee that will receive and display the data.
How many signals can the Xbee receive without suffering damage?

There is no number of nodes that would “damage the XBee”. The limit of how many nodes that a node can receive data from over the air is a functionality of that specific radios versions throughput. As there are several different XBee models, I would suggest checking with the exact versions you have’s product manual.
