I recently started my firmware development for the Connect WI/ME. For some reason I am forced to use
XHTML-Code, but I am not sure, if this is supported by the advanced web server and/or PBuilder.

No it doesn’t (at least not in Net+OS 7.1, and I’ve seen no suggestion that its any different in 7.3) - in fact it actively wrecks some attempts to generate XHTML code (e.g. it forces upper case where XHTML requires lower case).
The basic problem is that Digi haven’t updated PBuilder for a long time - the later versions of the Allegro software do support XHTML.
Digi ship version 4.34 - when I spoke to Allegro a year or so ago version 4.51 was current.
So Digi need pressurising to update the Allegro software - XHTML compliance is becoming increasingly important
